Maple Pear Salad
A fall flavor explosion in a salad.
All you will need to make this sweet and satisfying salad is:
- 5 ounces (8 loosely packed cups) arugula
-1/4 cup red onion, thinly sliced
-1 cup raw walnuts
-1 cup cooked quinoa
-1 ripe pear, julienned
-1 ripe avocado, thinly sliced
-1 tsp garlic powder
-1/4 cup + 1T olive oil (separated)
-1 T apple cider vinegar
-2 tsp high quality maple syrup
-1 tsp Dijon mustard
-1 clove garlic, grated
-salt and pepper to taste
The process:
Heat a large skillet over medium heat with 1 T olive oil and garlic powder until fragrant. Stir to combine.
Add in walnuts and stir to coat in the garlic oil. Season with salt.
Toss frequently and cook for about 5 minutes or until golden and toasted. Set aside to cool.
Make your dressing by combining 1/4 cup olive oil, Dijon, apple cider vinegar, maple syrup and grated garlic to a jar. Shake her up, taste and season with salt and pep!
Combine all ingredients and dressing in a large bowl and toss to combine. To ensure zero waste, you’ll want to lick the bowl clean.
