Maple Pear Salad

A fall flavor explosion in a salad.

All you will need to make this sweet and satisfying salad is:
- 5 ounces (8 loosely packed cups) arugula
-1/4 cup red onion, thinly sliced
-1 cup raw walnuts
-1 cup cooked quinoa
-1 ripe pear, julienned
-1 ripe avocado, thinly sliced
-1 tsp garlic powder
-1/4 cup + 1T olive oil (separated)
-1 T apple cider vinegar
-2 tsp high quality maple syrup
-1 tsp Dijon mustard
-1 clove garlic, grated
-salt and pepper to taste

The process:

  1. Heat a large skillet over medium heat with 1 T olive oil and garlic powder until fragrant. Stir to combine.

  2. Add in walnuts and stir to coat in the garlic oil. Season with salt.

  3. Toss frequently and cook for about 5 minutes or until golden and toasted. Set aside to cool.

  4. Make your dressing by combining 1/4 cup olive oil, Dijon, apple cider vinegar, maple syrup and grated garlic to a jar. Shake her up, taste and season with salt and pep!

  5. Combine all ingredients and dressing in a large bowl and toss to combine. To ensure zero waste, you’ll want to lick the bowl clean.
