Rosemary Lemon White Beans

If you are a bean lover, these tangy lil guys are exactly what you’ve been searching for.

All you will need to make the beans:
- 1.5 cups of cooked white beans or 1 [15.5oz] can, drained and rinsed
- 1 T fresh rosemary, finely chopped
-1/2 tsp lemon zest
-1 clove garlic, grated or finely minced
-1 lemon, juiced
-2 T olive oil
-1/4 tsp salt

The process:

  1. Whisk all ingredients except beans in a medium bowl to make your lemon rosemary dressing.

  2. Add beans to the bowl and stir to combine.

  3. Best if you let marinade in the fridge for some time, but delicious either way.

  4. Enjoy by the spoonful, with greens or smashed on fresh bread.
