Easy Pantry Peanut Noodles
These creamy peanut noodles will be your new go-to pantry meal. Salty, slightly sweet and just the right amount of heat.
To make these creamy, dreamy noodles you need:
- 16 oz of your favorite noodles (I like lentil noodles for extra protein & GF)
- 1/2 cup creamy peanut butter (unsalted)
- 1/4 cup soy sauce (or tamari for GF)
- 2 Tablespoons sesame oil
- 2 Tablespoons rice vinegar
-1 Tablespoon ground ginger powder
-1 Tablespoon garlic powder
-1 Tablespoon sriracha (optional for a touch of heat)
-1 teaspoon maple syrup (optional for a touch of sweetness)
-1/4 cup water
-1/2 cup reserved cooking water
Optional Toppings:
-lime juice
-fresh cilantro
-green onions
-veggies of your choice
-tofu or tempeh
The process:
Cook noodles according to package directions.
*Be sure to reserve 1/2 cup cooking waterAdd all remaining ingredients to a jar (screw that lid tight!) and shake to combine until smooth and creamy.
Pour peanut sauce over warm noodles, add in your reserved pasta water, and mix until they are swimming in creamy goodness.
Add desired toppings - veggies and tofu pair wonderfully but since this is a pantry recipe, I kept it simple with fresh cilantro, green onions and crushed red pepper flakes.
